    Gerd Oberfeld, MD, was the environmental medicine expert at the Salzburg State Department of Public Health and the head of environmental medicine at the Salzburg and Austrian Medical Associations. His focus has now shifted to studying and applying healthy eating habits, including growing vegetables and high-yielding heritage grains in small plots.
